I prefer Aiptek to Mustek. Check the Aiptek website and look at their model 4100 or better. I have one of those and it's great.
You can also do a search on the Target website for Aiptek (though they mark up the price some).

Language - do Spanish. It's easier and more practical...unless you live in Canada or Brazil. I wanted to do German, but came to my senses before I had to choose. Spanish was a cake-walk.
